When I came to Spain and discovered Gazpacho it was love at first sight, it’s a cold soup but I drink it like water, it’s a fresh and very healthy drink.
1/2 kilo of ripe tomatoes
1/2 green pepper
1 clove of garlic
4 tablespoons wine vinegar
1 slice of white bread
fine salt and olive oil
Put the tomatoes into boiling water to blanch them and then remove the skins. Place the tomatoes in the blender, add the peeled and chopped cucumber, pepper, garlic and bread soaked in water. Blend for a few seconds and add the salt, vinegar and oil; taste and adjust the flavors if necessary. Pass the mixture through a strainer and leave it for an hour.
Serve it cold in individual cups accompanied with croutons, cucumber, onion, tomato and a hard-boiled egg.
